The European’s have a saying; “Bread is older than Man”.

Bread has long been attributed to the rise of mankind, with the widely held belief that man has been baking bread for over 30,000 years. With the discovery of a source of nutrition which could be stored and kept through the long, cold winters, man finally progressed to the neolithic age of farming and civilisation, making the trade of baker one of the oldest and most fundamental in the world.

The Egyptians were first accredited with the intentional use of a “starter”; wild yeasts found in air were allowed to react with flour and water over an extended period of time, creating carbon dioxide bubbles, which when mixed into their standard doughs resulted in lighter and fluffier bread - a process we now call leavening.

Edwards Sourdough retains these same core principles in bread making that date back to 300BC. Our baking process begins with the creation of starters that are allowed to ferment for between twelve & thirty six hours that, once combined with premium flours and grains, lend Edwards Sourdough breads their characteristic rich and full-bodied flavours. Lactobacilli are a bacteria that are considered extremely beneficial to the human body and have probiotic uses. Lactobacilli produce lactic acid in the human digestive system, which among other purposes, helps keep pH levels in the intestines stable. Ongoing research has linked Lactobacilli with possible means of combating irritable bowel syndrome, liver failure, asthma, high cholesterol, lactose intolerance, and necrotising enterocolitis (a form of bowel disorder).
